Healthy Classics : Spaghetti with Microgreens

Ingredients:

  • 8 ounces spaghetti

  • 1 tablespoon olive oil

  • 1-3 cups mirepoix (diced carrots, celery, and onions)

  • 3 cloves of garlic, minced

  • 1 pound Italian sausage, casings removed

  • 1 can (14 ounces) tomato sauce

  • 1 teaspoon sugar

  • Salt and pepper to taste

  • Grated Parmesan cheese, for garnish

  • Fresh basil leaves, for garnish

  • Add any amount of your favorite Microgreens. Our suggestions are : Red Cabbage, Broccoli, Kale, or Power Punch

Instructions:

  1. Cook the spaghetti: Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions until al dente. Drain and set aside.

  2. Sauté the mirapoix: In a large skillet, heat the olive oil over medium heat. Add the mirapoix (diced carrots, celery, and onions) and sauté until they start to soften, about 5 minutes. Stir occasionally to prevent sticking or burning.

  3. Add the garlic and sausage: Add the minced garlic to the skillet and sauté for an additional minute until fragrant. Then, crumble the Italian sausage into the skillet and cook, stirring occasionally, until it is browned and cooked through.

  4. Simmer with tomato sauce: Pour the tomato sauce into the skillet with the sausage and mirapoix. Stir in the sugar and season with salt and pepper to taste. Reduce the heat to low and let the sauce simmer for 10-15 minutes to allow the flavors to meld together.

  5. Combine spaghetti and sauce: Add the cooked spaghetti to the skillet with the sauce and toss until the spaghetti is evenly coated. Cook for an additional minute to heat through.

  6. Serve and garnish: Transfer the Mirapoix Sausage Pasta to serving plates or bowls. Garnish with grated Parmesan cheese and fresh basil leaves for an extra burst of flavor and aroma.
