Broccoli Microgreen Pesto

Broccoli microgreens are a delicious and nutrient-dense addition to any meal. They are packed with vitamins and minerals, AND have a delicious flavor that pairs well with a variety of dishes. One way to enjoy broccoli microgreens is by making a pesto sauce. Here we will share a simple and tasty recipe for broccoli microgreen pesto.

Ingredients:

  • 1-2 cups of broccoli microgreens

  • 1/2 cup of grated Parmesan cheese

  • 2 garlic cloves, minced

  • 1/2 cup of olive oil

  • Salt and pepper to taste

  • Red Pepper Flakes (Optional)

Instructions:

  1. Rinse the broccoli microgreens and pat them dry with a paper towel. It's important to make sure they are completely dry, as any excess water can affect the texture and flavor of the pesto.

  2. In a food processor or blender, pulse the broccoli microgreens, Parmesan cheese, and garlic until well combined. Start with a few pulses, then scrape down the sides of the container and pulse again. Repeat until the mixture is finely chopped.

  3. While the food processor or blender is running, slowly drizzle in the olive oil until the pesto is smooth and creamy. This can take a few minutes, so be patient and take breaks to scrape down the sides of the container.

  4. Taste and adjust the seasoning with salt and pepper, as needed. Keep in mind that the Parmesan cheese is salty, so you may not need to add too much salt.

  5. Serve the pesto immediately or store it in an airtight container in the refrigerator for up to a week. You can use it as a pasta sauce, a spread for sandwiches, or a dip for vegetables and crackers.

For pastas we recommend giving the pesto a little bit of heat in a saucepan until it becomes the colors become a bit darker. Add freshly boiled pasta dripping with pasta water. Trust us, the starch in the pasta water makes a BIG difference. Stir it up and add your favorite protein!
